2007 Cabernet Shiraz Merlot

VINTAGE
A warm dry ripening period resulted in excellent fruit flavour development and acid balance of the wines.

WINEMAKING
This wine was made with 40% cabernet sauvignon, 35% shiraz and 25% merlot. All varieties harvested individually at optimum maturity and fermented on skins for around 14 days. Then matured for 12 months in a combination of new and 1-2 year old French and American oak hogsheads. Wines were tasted and blended after maturation to obtain their unique balance.

COLOUR
Medium red in colour.

BOUQUET
Classic blackcurrant and cherry fruit aromas.

PALATE
Velvety smooth chocolate-cherry and plum fruit flavours, leading to a well balanced finish of soft silky tannins.

SUGGESTED FOOD
Enjoy with veal or rich pasta dishes.

CELLARING
A very attractive wine now, the 2007 cabernet shiraz merlot will reward careful cellaring up to 2013.
