2003 Cabernet Sauvignon

VINTAGE DESCRIPTION
The 2003 growing season had good, solid, winter and spring rains.  A very dry and warm January with a burst of rain in early February resulted in a late vintage.  The resulting crop yields were relatively low with the smaller berries giving intense flavoured wines

WINEMAKING NOTES
The 2003 Cabernet Sauvignon was harvested quite late in vintage.  The grapes were crushed and yeast added to initiate fermentation.  After seven days on skins the wine was pressed, with the pressings added back into the free run.  After 16 months aging in American and French oak the Cabernet Sauvignon was lightly filtered and bottled

WINE COLOUR
Medium brick red in colour

Rich, complex dark berry and ripe cassis aromas, the hallmark of a great Cabernet

WINE PALATE
The palate shows intense blackcurrant flavours that are married with fine aged oak tannins. A well-balanced Cabernet Sauvignon that shows typical regional characters, finishing soft and rounded. A wine to savour

SUGGESTED FOOD MATCHING
Ideally suited to a main course of premium steak such as eye fillet or fillet mignon, roast lamb or grilled lamb strips. At home with matured vintage or premium blue vein cheese

CELLARING NOTES
The wine is approachable now but will age well to 2008. Screw cap will enhance this wine’s capacity to cellar
