2005 Sauvignon Blanc

VINTAGE DESCRIPTION
The 2005 vintage was characterised by a very long dry ripening period with quite mild temperatures. The cool conditions particularly favoured white varieties, especially Sauvignon Blanc that resulted in outstanding aromas and flavours with high natural acids with an almost perfect balance

WINEMAKING NOTES
The 2005 Sauvignon Blanc grapes ripened early and were harvested in the cool of the night to retain their freshness. The grapes were quickly processed and after cold-settling for 48 hours the clear juice was separated and fermented with a specialised aromatic yeast. A cool, controlled fermentation and early bottling was carried out to ensure retention of the classic Sauvignon Blanc flavours

Very pale straw with an ideal light green hue

This superb Coonawarra Sauvignon Blanc has a seductive mix of complex lime aromas complemented by exquisite fresh ripe passionfruit flavours which support the long, crisp, graceful finish. The wine balance is impeccable

WINE PALATE
Very attractive ripe passionfruit flavours that are very well balanced by the crisp, natural acidity. A Superb Coonawarra Sauvignon Blanc that will definitely improve and delight in intensity of flavours over the next few years

Barbeque lemon prawns, crayfish and fresh green salads

CELLARING NOTES
A very attractive wine now, the 2005 Sauvignon Blanc has longevity and will reward careful cellaring up to 2008
