WINEMAKING NOTES
Good winter rains and a long cool ripening period resulted in excellent varietal fruit with good natuarl acidity. The grapes were picked on March 10 2004 and immediately transported to the winery to be processed. The grapes were crushed, and the juice cold settled for 24 hours before adding the aromatic yeast. The wine underwent cool fermintation and was bottled early to retain the delicate varietal flavours.

SUGGESTED FOOD MATCHING
Best enjoyed with a fresh lime prawn salad.
