2006 Cabernet Shiraz Merlot

VINTAGE
2006 was a very good vintage with gentle, warm dry conditions throughout March and April providing very favourable fruit flavours with excellent natural acid & balance in the resulting wines.

WINEMAKING
All varieties were picked separately at optimum flavour. Fermented in separate batches, stabilised and meticulously blended to give this unique style, retaining excellent fruit characters.

COLOUR
Beautiful deep purple with red highlights.

BOUQUET
Lovely aromas of rich ripe plums and liqueur cherries with a hint of spicy chocolate.

PALATE
This wine is velvety smooth with ample mulberry fruit flavours and more of the liqueur cherry characters. Carefully managed maturation in French and American oak barrels has given the wine toasty vanilla and chocolate to compliment the fruit flavours. Fine, dusty tannins add structure the long finish.

SUGGESTED FOOD
Enjoy with veal or rich pasta dishes.

CELLARING
Enjoy in its youth to take advantage of the fresh fruit flavours in their prime, or cellar for 2 - 4 years to allow the wine to soften further and develop more chocolaty flavours.
