2007 Sauvignon Blanc
VINTAGE
A warm dry ripening period resulted in excellent fruit flavour development and acid balance of the wines, particularly in Sauvignon Blanc.
WINEMAKING
The grapes were picked in the cool of the night at 12.5 baume, crushed and cold settled immediately. A long controlled ferment was carried out before stabilising and bottling early to retain the fresh fruit characters of the Sauvignon Blanc variety.
COLOUR
Pale straw in colour with a touch of green tinge hues.
BOUQUET
Very attractive fresh and lively aromas of citrus and lemon with a hint of passionfruit.
PALATE
Full fruit lime flavours with a soft, crisp finish.
SUGGESTED FOOD
Enjoy with lemon prawns, natural oysters fresh green salad.
CELLARING
A very attractive wine now, the 2007 Sauvignon Blanc has longevity and will reward with careful cellaring for 2 to 3 years.
