2007 Unwooded Chardonnay

VINTAGE
The 2007 ripening season was characterised by a very dry winter followed by the most concentrated vintage in Australian winemaking history, the result being very intense fruit flavours in the wines.

WINEMAKING
The 2007 Chardonnay grapes were harvested at night in March. The grapes were delivered and crushed with minimal skin contact. After a cold-settling period of 36 hours the clear juice was transferred into tanks where active yeast was added. The juice underwent cool fermentation before stabilizing prior to bottling.

COLOUR

Pale straw with a distinct green hue.

BOUQUET

Fresh lifted tropical fruit and lemon aromas.

PALATE

A stylish, fresh, delicate Chardonnay with attractive pear, apple and lemon flavours with a long, fine crisp finish.

SUGGESTED FOOD

Grilled perch or whiting with a fresh Greek Salad.

CELLARING

The 2007 Unwooded Chardonnay will improve over the next 3 years. A very attractive drinking now style, but will delight with fruit complexity in the future years.
