2010 Cabernet Sauvignon
VINTAGE
Above average soil moisture levels, ideal growing conditions, minimal disease issues and above average summer temperatures prior to vintage. Winter rainfall gave good soil moisture levels for budburst in early spring. Favourable conditions continued during spring with minimal frost and settled flowering conditions allowing for excellent vine canopy development and fruit set.
WINEMAKING
The 2010 cabernet sauvignon grapes were fermented on skins for 7 days at 26 degrees centigrade with gentle pump overs. Drained and pressed to tank for MLF and racked for maturation with French and American oak for 12 months prior to blending. No fining was required pre-bottling.
COLOUR
Red/black in colour with purple hues.
BOUQUET
Displays leafy varietal Cabernet with dark berry and hints of spice.
PALATE
Sweet red and dark berries are well balanced with the spicy vanillin oak.
SUGGESTED FOOD
Enjoy with a ploughman’s lunch.
CELLARING
An outstanding wine made to drink young and fresh and will reward with careful cellaring in the medium term.
