2007 Sauvignon Blanc

VINTAGE
The 2007 vintage was characterised by a very long dry ripening period, with quite mild temperatures. The cool conditions particularly favoured the white varieties, especially sauvignon blanc, resulting in outstanding aromas and flavours with high natural acids with an almost perfect balance
.

WINEMAKING
The 2007 Sauvignon Blanc grapes ripened early and were harvested in the cool of the night to retain there freshness. A cool, controlled fermentation and early bottling was carried out to ensure the classic sauvignon blanc flavours were retained.

COLOUR
Very pale with an ideal light green blue.

BOUQUET
This elegant sauvignon blanc has a seductive mix of fresh lime and exquisite ripe passionfruit aromas.

PALATE
The palate displays very attractive ripe passionfruit flavours that are well balanced by a crisp, natural acidity produced by the warm days and cool nights of the Coonawarra region.A superb Coonawarra sauvignon blanc that will definitely improve and delight with an intensity of flavours over the next few years.

SUGGESTED FOOD
Barbeque prawns garnished with marinated feta.

CELLARING
A very attractive wine now, the 2007 sauvignon blanc has longevity and will reward careful cellaring up to 2010.
